First off we're going to be talking to the francs from frank keys spokesman Tino kitchen companion and cooking -- this book. When it came across my desk at the -- come of plan to convert them and I opened it up this is not claimed. Both the French -- personality and frank Casanova. Well it's kind of the restaurant the handbook will it reads to -- we'll talk them just a minute in the second half will be talking to the busy baker that's Lucy baker. She likes to big things with news. And as she's got a great took up the courses available watermark books watermark books is 47 when he's Douglas you know it is one of the best independent. Locally owned and operated bookstores and all the country and they do so many great things where they're still at dinner and the discussion the literary feast once a month. Or whether it's just having great -- they have so many authors to come into town and our. Pat watermark books and of course that's where you'll find most of the books that we talked about your on the good life including the -- baker. What a workbook you can problem on Twitter at twitter.com slash watermark books or visit watermark books are commonly -- learn about all the upcoming events. Let's jump right in talk to the French franc trust and LA and frank Castro folks again as I hope I said that correctly. It's a great to have you on here but these guys have been in the restaurant business and friends for along time. Their restaurant in Brooklyn is is simply called frank keys when Tina good morning guys are welcome. -- you go. Well. You guys I'm Tony when I got the book you know it's come old fashioned looking book and and I thought that's kind of neat look and gilded gold page -- in Sony Pictures in the middle and then some started look at the recipes and so holy crap. This is great stuff we try to culpable I've got all excited and and then lo and behold and because the book is just you guys were. On this CBS early show on the 24. And you fixed through the book the one recipe that well I've picked out on the TV she was so through with that have a tally with a brown butter and say it shouldn't. And that's an -- the tunnel parsley celery salad so. Congratulations on the book but more importantly congratulates on the restaurant. Frank I wanna view -- it's also what about that you're relationship aluminium business and your journey into the lead you to open. Frank he's twenty you know and Brooklyn.
Yeah well thanks thanks for -- again. But hey you wife picked up caterpillar recipes because it. One of the most popular recipes. The most popular issues at the restaurant. US got really good case. The Whaley has started and the reason why we got a book together it's it's a common it the culmination of all the recipes. That we have on the menu at the restaurant. And we -- in. In cooking them for a few years that everybody loved and so much so we decided to put together well and has everything. And on the menu. As -- as a book while. It's recipes -- from our child was gone up and it's also professional recipe that we.
You know it's when I would I some through there at that -- in the restaurant must be. A fun place and it sounds kind of cliche but. These are not caught the book overly fancy dresses but they are creative you know the the -- seller with seller. You know it's kind of parse -- with some of those other currencies -- vegetables that go great in summer or winter. And then in the dressing simple loop but I -- the guarantee you there's not many people would have made that sound.
Now and it says -- is there that there really common ingredient so when you put them together and you combine that with I'll allow any media immediately become the seventh at seven Italians about what they've let it get on the other -- repertoire. All the long enough you know I'll I'll focus. What the restaurant was you know right now he would -- a repertoire. Of that type of food that you know them came over with the immigrant and cabinet change little bit but it was a kind of food that we grew up on -- apparently nutcracker few -- most Americans. What they think of Italian food when -- think about Italian food that red dog and yet either have a valid. And I'm not you know wouldn't really want to put them both together so you can have those recipes. Here all Monica how are and malveaux group you know put your family or your brand not an -- beta whatever it says. You know you have a recipe you know they work every time because we feel we should we've we've we've got maybe there are thousands without the people what some. And now that there are fallible and really clear format that's what we call it's good to go back even cooking manual. That would fit that could Emanuel to be the -- and I wrote the piece of that old world flavor.
Let's talk about you guys -- it. Do you guys obviously have known each other for quite some time and I would imagine. Looking at both last names that you have roots -- from from the old country in. You grew up and -- that cook a lot when did you guys meet how did you decide to get the restaurant business together.
Are we met on they hockey field while we were probably. Twelve and thirteen years old and including New York both came from Italian American families. Both had very strong Italian food -- do. Separately and together and you know both have had the need in the restaurant business. And you know along the same line the different -- but you know don't don't victim equality probably our careers. Nam you know we we ran into each other on the street in New York in this story in the book. And Nam you have to look at the briefly like this story about basically. Let's start a restaurant lit each other and it was just you know everything -- Belmont in the name of the restaurant this type of food we want to do and getting away from. They construct. Of the high end restaurant and the office something. Of value that is open all day it was really high quality and that it really good price good value. And edit it came together and actually.
I like the first sentence of the introduction the cops were searching frank correction those car it's a long story can with the -- Good stuff.
Good story to weren't worth giving a book but he. It it just for the story alone because you can't believe that have any circumstances viking -- no circumstances. Came together make -- a great restaurant but you know we elements rebellious how to put the people we got.
I can't wait to visit Brooklyn as you -- did you. Who do you desire M worked a signed -- a location here on court street for 57 court street tricky for 37 the the name medical. On the front window is and it was that a a location that was -- providential just came along are we your search and in the neighborhood.
There was absolutely -- four and it was you that was it that was really the only way that we were gonna be successful. And what they've -- that that particular crime in New York because they're real estate crisis was so out of control and new York and they're really offer. You have people value you know the landlord got to be and not let you out of court they have got to be on everybody's got agreed that we're gonna provide great quality -- great -- but you can't do it that are rented 25000 dollars a month. So we get the same client Powell. Which are similar -- and families around you close in New York closed Manhattan. You don't get many neighborhoods than not count cards which is an actual effect we have. Well given family that had been in and around that neighborhood my grandfather was born and opera not far from now. And you know -- family Vietnam and in Williamsburg so kind of a natural fit for. You know guys that were coming into that or is that wanted to create a restaurant. Around the community. And watch -- can't participate.
I you know growing up I had some Italian influence. Indirectly in the assembly and -- remembers a cable and -- in the Tokyo c'mon we're -- there roses and we get over there in. The smells in this pot of stuff on the stove at 8 o'clock in the morning at 9 o'clock in the morning going all day. And then you realize how good that snow was when you've probably got called in all sweaty and hot the symptom of the -- to.
If you love that smell that big that thing that we owned a non with the book them specifically like this Sunday saw the next grandma clever. There's a couple element of a couple of techniques. Very simple stuff that grandma doesn't that we we believe we documented it well in the book you can recreate that in your kitchen. Just by reading it buying these fine ingredients and putting it together.

Yeah we open up the year happy because you watered. Offers invaluable lower east side we also wanted to let you present the Manhattan you know we work. We were down on Manhattan grand but we -- down on you know it'd -- Manhattan -- so great marketing we wanted to be a problem part of it so we open up the small restaurant that I have a a little satellite. You know going on going on down out.
Well when it when -- look at the website and 11 AM to 11 PM -- 11 AM to 1 AM on Friday and Saturday. And limited deliveries seven days a week 11 AM in the 7 PM.
Yet don't close people don't like it when you close you know it's 3 o'clock might be hungry.
