Must've been a fun book for you to put together -- this of the content that first it is a big book because if you're gonna put some of the best of and -- soups from around the world. A challenge someone him but about bunch of fun I would imagine.
It with a lot of fun of the most fun part of it believe it -- was actually learning. How what that's very is that the -- of the world. I mean those of us and in this country were kind of familiar with you know cream of tomato soup and cream of mushroom soup and maybe a beef noodle soup but once you start exploring. You come up with some amazing troops that are just easy to make. It would never have thought of doing them and what I have in mind is this Georgian beef and apricots -- And that's Georgia as in. As in Russia Georgia about. And it's made with that dried apricots it is -- until I dropped Alicia Spanish.
You know and I guess another thing that. You touched on the soups that most people kind of have to come to mine and I'd be willing to bed and unscientific. Non surveyed guests on my part. 60% of folks who eat soup in this country -- either have a cam.
That's not as bad guess I suspect and here's what I found was so remarkable about the in this book together. Was how easy it is to make troops and if you have a blender it's easier still. And what I try to do is read it and had people open up a can of cream of mushroom soup you can make your own cream of mushroom soup. In about two more minutes that it takes to open that can't. And it'll be ten times as good a lot less sodium and a lot less sodium you control -- full out manufacture.
It is not that this is -- I think that we've come a long way from. The early days of you know deluded concentrated stuff the attic -- water and you have soup. And there's a lot of healthier choices in canned soup products but. They're shot for. On top of quote a Stover opened fire. And throw things in it.
Got -- filled. And elect the water -- battled -- you basically have your own condensed soup that you can rehydrate later so it's -- The easy thing to do.

Let's talk about basic broth. Because it. Everywhere and should at one time when they're like do this. But we have alternatives. Having a broth having a consummate. All starts with. The idea of borrowed brazing him borrowing some kind of bonuses and letting some -- for a long time.
essential basically creating a foundation. To not only soups but also stews and sauces. And it's it's pretty easy to do all you need is some time and and and you don't actually have to do anything during that time as something's simmers over low heat for four to six hours. But you perhaps need to be around out so it's perfect for a winter Saturday or Sunday when it's. Freezing cold and you want the house to be filled with those left thing aromas of of -- stop making. Are you a fan of brazing the bones in the broiler before you. Put him in the stock but.
Yes I am very much you first goal when you do that you get a much richer stock. It takes a little bit longer so what I do or do not do it that way usually based in my time constraints. But you'll get a richer brought by wrote in about first.
Busting the bones to exposed Merrill.
Absolutely and that creates kind of releases. The gelatin which will. Solidified the brought -- to cool. Vegetable -- You know vegetables -- always -- That. -- and I think that's actually even easier because there's no -- involved everything different to a -- it. One of the best way to make that were brought this if you've ever looked into the crisper -- of your refrigerator you find all the little bits and pieces of left over. Who knows what. You can throw it into a pot boil it up you got yourself vegetable. And you can -- one half dead care so into the product -- it's a little sloppy if you'll floppy carried. Don't throw it out to be perfect first stop making.
The book of laid out well -- does have the beginning section a basic broth. And then it starts off with clear soups and the most of us think of clears troops of what we get at the at the Asian restaurant -- at the the Japanese steakhouse where there you know gonna fix them and they give -- little cup of clear soup with a piece of green onion floating in it maybe a -- mushroom. And then you take it up it chunky vegetable chunky lagoon make the beans.
That that that's right beings. I think they're just amazing and so good for you you know you know I kind of devised this. This. Addition of this -- nontraditional way because I was talking about -- From around the world. And little specific kind of don't fit into that category so I decided at least -- at two levels chunky such sucking each and that's what took you to do and smooth. -- vegetable -- troops smooth what do troops.
