What a great day everybody outside which is where she was 6 o'clock in the morning with good start fresh today it's so nice outside get outside. plus some of the food trucks holy macro grow and every day. New food trucks that non and of course you know that if you followed duties blog at Kansas dot com. You would And you could play with all cellular phones that she you know she's do not only just restaurant news but the she's out about the motive. You can learn more go to Kansas dot com and under payment due on today's good morning and welcome to the program. No man I'm great more. Saw article and dining out the course of Friday's dining out section is always the first place left guy goes when the goes section rods in the front room for artist and more importantly you know again if you're subscribe to Kansas dot com you get the stuff. Even earlier on Thursday. And saw this deal food trucks on one spot. And went what a great idea and this is the common charity event that. Well tomorrow they're sorry they're healthy track Campbell we've got three letter kinda. Mobile right now that are kind of like the he Abu. Food Network show that the Food Network show about. kind of you know. And down until we three out on the flying didn't sandwiches and he and that scratched. And they gathering together to do it. I have a great effort create a relief tomorrow as lord you are and aren't you my which type our parking lot. Someone that creator ultimately help they're together serve their that's able to part of under yellow gates invented they've kind of we've done to so that they can do this fund raiser. I think it's just a great idea. Yeah and also you know to put out today together right this minute. Gap the better block party that better I think either 130 I don't regret it article. Trying to stoke whose images. Best I've got the better block but let's talk about that permit that's been going on for awhile now and just what is that. Bat better black party contender and trying to promote awareness of that area. And to get those people gathered in and the business period down parent. I get people biking in that area though I a lot of activities going on yesterday and today and then you're gonna have those contracts up their opinion servants. yeah absolutely got that right now. Yeah and when you're down there then coincidentally you could stop and all things barbecue because well you may not be signed up for the grilling demo that started. News and today there's there's two great things Today at 10 o'clock there was a see through growing demo and all things are reviewed and of course altered our Q has the best selection the spices and robes and wood and coal and grills and and now a new home of the Green it. Not that far out thanks for let me that in there now let's go back food trucks in his element that I do I think. I so enjoyed getting talk goes off the little truck used to hang out at the old Tom farmer's market and and we everybody that's been here for a knows that if you look around. There's some Mexican cuisine and taco trucks. But boy it's growing and. Yeah I mean that the first find another street only was. A little pocket track there's just you know actually eagle by the picture parking lot there it I think it's called. It and that person has by the project and got a hand. I can't we developed a real toward a problem at eagle he walked street at least twice a week at the super toward a strong impact Eric. It's putt and supporting still kind of have to appear to. I don't know where one day and they are all over panic we're different everyday. And every time my least putting the eagle somebody else tells him another It's every day here I didn't want it to China taken up like crazy here. With the eagle needs to pay you so she can cover all these trucks. I you know I totally agree. I'll I'll I'll write a letter I don't think. And if folks wanted to follow these trucks are a couple different ways to do it I think can be so cool we had a which is tough food trucks website but. How well I've read about them when I can't on my blog and thought that like. A blogger dot Kansas dot com buy backs fresh dining entertainment spot on the seat on the left side of the Patriot Act which tracks so whenever they're doing something. I'm different I linked to them now also. They all have FaceBook page and that's how they let you know if they're gonna beat you it will be. In the news for you log on to their FaceBook and and they say well we're out here today we're out here today and so the unifying okay Arnold about every Chile and I'm they really walk over there Q. Yeah and they last Thursday I love this Johnson's garden center. Is gonna do just monthly thing to food truck thirty days and had all three trucks at all three Johnson's locations and the flying stow was here close to the studio and man apparently I don't know I didn't but Whitney from jig a bigger sense that she was 45 minutes in line a Marty said. Oh my god there were so many people apart and it was Jim the report anonymous. Well they're very popular can help stretch and I really fast you have to go it's two patients who. Yes early hit that they're so popular they now these guys are doing here squirming out and I went out there because they make you crazy pot goes and it did appreciate those candidates are their menu right now. They have these crazy burgers that are so good it may you know a Google and and them all higher and ingredients in their stats there. Really good I was just look at your blog and you've got then the menu board the handwritten menu and from this past week and. That's best done right now I think that any talent to our Q and I think a public that's changed the menu that change there a couple weeks. And I have heard that they are running out consistently. A moment ago and I think that's a good. Yeah it is then I heard it. From that source that this Qaeda with the first it'll hardest Satan sandwich does he know he'd make one of the best Cubans. But some people say they've ever had although he can't think of this morning Betty and I are going he can't make it today but. But he supposedly makes great counter I tried out the other wanted to brother or sister you are that could be as they press. They're really my mother doesn't I don't you know I can't the other included cheese sandwiches and homemade chips since. They are history at the end they're trying to make it go it I think this school in the eighth but all three of those are going to be today. In the parking lot of the skating center. At tomorrow. And am sorry and I think that's. This is obviously a good cause but more importantly it's a great opportunity. To show up in Tennessee what's going on. Exactly I mean Miley probably a bit of my blog is. I don't have a very unlikely they'll choose which one isn't it. Exactly and what you really need do is go with three people. So three different lines three different people or to me this artery that and everybody shares at the end I think that school. You gotta go next time they're playing so has their travel right there are some of the most delicious and I've ever read in my life. I can't wait. So this event tomorrow is knew before. Yeah I think the contracts are gonna be out there from noon to three. It's what they told me you know if they don't forget it I'm sure they'll stick around but I wouldn't count and. And a live band the food trucks all donate a portion of the day's proceeds support greater relief. And Akron it's kind of like a pre tailgate party for for little saw a little hockey. Yet the played Smart I go to tailgate parties and people I have been girl up there. But the Smart ones won't Beagle and over. but I can't wait yeah you know I just hope that is. This trend continues I think finally the city has made it a little easier to get a permit and be licensed to have a food truck and just think you know under the program with a guy who put together a book about food trucks and and he goes all over the country to big metropolis areas that have. A lot of food trucks and and and they do things like this but they'll be 25 truck. Exactly and it kind of start it kind of got really in LA in LA parking all of them. Friends tell me about one at Atlanta does match I think most big cities are trying to get messed. You know there's 2030 adamant and I think get together once people can go down. Well yeah the one guy in LA that the craze in the name of his truck escapes me now but. He's now got like fifteen trucks and a warehouse with a massive kitchen and it's a real professional operation but everybody says it's still. That high quality and made to order specials food. From the truck get it cool. That's fun I like get them you know it does it go up the window that. Bet your letter that Patrick Henry and the contract people could get it. What a treat. Would you can't write about it and folks you are you still doing some online live Chatman had a That every every other Thursday from 130s he's thirty looking to log on and got the whatever you want it that's fun a lot of good things there. I. Gonna let that let button that. I I wish we get. Tonight is a can the secrets of special occasion for somebody we're doing something special and. Meanwhile let's button by the patents are very kind. I any cop fish. And cheneys the here Attica Bandelier. And I think that's a cool. And you used clothes are still tickets available what. Yeah the airline and then everything cheap and they've got a cast are like 32 Mexican music all you can Nikkei has appeared to brother is doing. and other big shift employee can eat crawfish are always fun. and and the best part is. The mud bugs will be there. yeah. It's a little after nine I don't know is bringing the TV with them. You know I I see McCain I think it in a teacher I don't know that he's got the president and yet. I love because I know they that. On FaceBook this is yeah usual captain. Jamie and of them have a well they talk a little in Disney's. Have fun at the movies with the girls. So eloquent premier Mary actually go easiest. Could have take care. That's the peace deal which targets because the dining out section so much more should agree. Great source of information if you if you wanna keep track on what's happening with restaurants and things. And she talked about the new Chinese carry out the chose him walk on the west side in the current issue of this week's goes sections of Chicago. And the food trucks up from Sonya I can't wait MMM sandwiches. I think. of Satan sandwiches or I think triple and sandwiches and they get to do BSN which we didn't really talk too much about them but that's a Doug Buchanan the sister Jodi there on Annette Annette. And if you do a Google search for food trucks Wichita audio file kind of stuff and of course like that he said FaceBook dot com. Slash sandwich admitted I think. A beautiful may have nothing about a few other things that discovered recently the only one went but. First we're gonna talk the book is called making artisan How to make a world of handmade noodles stuffed pasta dumplings and more by my gasoline is agree she is magical and she travels all over the world doing fun things you could learn more about at least if you go to Green dot com they allies the case. Green dot com and trips and she just came back from Italy. Reading your bio Willie local author consultant influential chef few you study I was on you've had that you're executive chef at a a cool restaurant they do low you've you've done so many things but then more just came back from Italy. Welcome to the good life. Thank you glad to be here. What's fun. Tell us about you your journey in food and what got you to do all the things you've been up to here in the last decade. Well I have. Starting from way back yeah. A childhood I was lucky enough to do a lot of traveling. Growing up and living abroad again as a scientist and worked. Different universities and we always travel with So I think that for travel at a very young age. I was such by the age of six. Yeah that's like which is to lead you to lose I've always you know assistant police held court I mean that's really black hat into the food that the food just really got together for. So I wanted to wait to use those experiences. And use that love of you know history and culture are hurt and food it growing pains sent. All of that is one place and though a eventually it became a shaft and it's pretty successful career the And that along the way I have my kids and kind of fork in the road and started doing more consulting and right. So making art than pop which is the ball and I love it's probably it's just loads so easily so wonderful subject to. In I guess Europe. Usually ten years may be more. I made all fresh pasta and not just in what restaurant but in several other so really have a lot of experience of you know a lot of production on the pop but also. Exploring. Somebody let. Comic effect which I think you're gonna find in bookish a lot of the flavor pastor. What you know complete and we collapse of the story can prospect and hospital not crazy about those external lot of achieved by. But a year approaching mushroom cap. There I have roasted red pepper squads have asparagus asparagus support my favorites it's just beautiful. Be. Ask for our unit is quitting and then using different kind of flowers whole wheat flour rice flour cornmeal. Cornmeal and chipotle not exactly traditional delicious all the things. And you know that it did the best part is you're just talking about pasta. This is made with some of these beautiful flavors and and and and and aromas and collar. And that's just going to be part of the made simple is it could be you could just take that then put a little. All of our oil and some parmesan on it. Extra virgin olive oil and congress or maybe a little Korean and achieve all you need when you make your own it's really wonderful and I have seen that. After having its moment right now another well you know I think it had a big moment in the early eighties and then its. Think what happened is we kind of got used to. Commercial process popped up like fresh for the kind of comes and a modified atmosphere packaging. It's defense but it's just not payment now that people are really into. Global it news executable and do it yourself and well they're trying to save money that they still have fun. Patrick seems to really work and I can just himself from me you know people that write to me from the reviews not have a time. You know several people have told me that there is starting. Small business with a little fresh pot that's farmers' markets that that was really just banks. So you know it's just part what's in the air at the moment. And it seems like everyone should be able to do because the bottom line is three basic ingredients. Go into the making of possible it. And I'm surprised that it hasn't caught on sooner and more people are doing it. And fortunately now with your book which is before we go any further we have to acknowledge the fact that. Between use and Steve Mercado and the publisher who let you put so many pictures in this book. Men there's never been a better book that can tell you all the basics and show you the techniques. To make all the different style positives that you. I think that. I've succeeded in making and clear explanations that ordinary people can follow have can't. And that was Michael. And yes I do love working with that photographer Steve we've got to we've done many books together. And I think that's your right about the publisher allowed me to put all those pictures and because you know that it really really helps and then. 80% of the Balkans Italians. About 20% this from other places so. I have polish Peruvian have be interrogated. Geary and it had nothing else I for to video that. tolerated and made trucks actually partly flower with prodded it to the ground are getting into. But I have Chinese pot stickers yeah they're Greek tripod. General she's made Ukrainian. For Redick he which has stuck with camera cherries. It's so there's really a big righted the beautiful where you laminated we can't she'd. Possibly two sheets of spot stipulates. Partly on top ten point Presley's and and they kind of like it can't what you think you run that through the top of the machine. And 82 years and it becomes almost look like. Beautiful handmade Japanese people are very very lovely and really good so it was huge topic clear where you're be or maybe that olive oil and and publisher out of that I was talking about earlier. Yeah you know I and I love to hear people's questions about making process that because you know it's. Simple as said there's very few ingredients. Really can began after the excellent a lot of times put it a little bit of water. I like to add an extra you know just to make you richer. You know if you it yourself you can control what's in the so you know if you go to that market and asparagus currencies and now you should use that you wanna make it you know. Her pastor was kind of pressure he could do that if peppers are around maybe take that roasted pepper and the you know the cheating Russia actually mix for dry port Cheney's that you soak. And that gives a wonderful flavor to what I failed but they even make a red wine. that where I pick them like a real full bodied red line and cook did have a little bit until its European and that goes into the and it makes a beautiful especially forcibly with the a filed with the real hard time for poor. Do anything like that. Well they let's figure Gregg would come back we'll talk more about the school book the book is called making artisan Costa how to make a world of handmade noodles stuffed Dumplings and more is laid out so cool to part one it has all the basics cost ingredients making positive from wheat and other flowers. Flavoring possibility impart to Obama. The dumplings pasta sheets making. Specialty him positive stuff costly and the list goes. take a short break we'll come back believe agreed and tell you more about don't forget coming up Georgia on the show the great one of the week for a few budget of the Something's just better together but nothing quite goes together life. Italian cuisine and some really great. friends connections over there and I've studied Italian for a long time so as to whether people actually don't speak any English relate strictly for it and we have cooking classes we have programs. All different kinds of things like that and then I actually can't just came back from poorly. Which might have people call the southern Italy. down in the attack but the it's really uses the heel of the boot. It's a region that it shaped like Florida like a big peninsula this quarter also life. And that was exploring because we're going to be organizing aid and other culinary tours to pulley and the fall of 2013. Those two things are coming up. And and actually the complete itinerary is on the web site called the copious EPA GOP YA. I dot com where I work with how apartheid is the order he specializes culinary tourism and has been doing that for very long time. So we you know as far as all the details making sure everything is taken care of all the meals except for three are included. So I and we just have an incredible incredible experience last time and I see no reason that this year is not going to be. Just wonderful for those that do come along. A moment sounds great ten days. Days and days and and you know actually topic. Spent a few more days and some of the people from the groups now. We fly in have a role he's each at bat out there but really it's. You know we stay out that's the big tourist areas that is really the places where Italians live most. Restaurants and most of the places we visit you're not gonna see other Americans there other people that are they're saying that you really were getting the you know kind of the culture of the area in that it's a really wonderful let's take. Well it's cruel and better yet it's let's give you even more ammunition for. Making this book so good of the book that we have been talking about and the Phillies have put together is making artists is based ingredients but where we whether you know they have fifty pasta makers and you can it's an attachment and. Really all you need is a wouldn't rolling pin and I wouldn't after fresh pasta loves what that premium and ultimate. But it takes a look at the guilt or to structure of pop I think I have some really good clear instructions and clear photos and there. And I was capable learning how to do it and I believe that readers will be able to learn how to do it. But the easiest thing to get me out. A Craig how the machine the current with a role is to. And that is very useful. And you could probably and realized 6075. Dollars on what that the chief habit for your lifetime. And that and your children. There's you know almost no moving parts very little you know there's a there's a crank and it machine. And then you know nothing electric nothing really to break the only important thing is don't put that thing and that in the washing machine the dishwasher you have to wait it out by hand. Conchita could get rusty and there are. But really and then beyond that Your area that has you know we have access to talk you know the farmer's market some of those really good example. for a free range chickens are the ones that are that. Really orange that's gonna make an And then the flower it has. and all purpose fire at the supermarket and makes very very good pop you want until you know it your quality. You might have a come local. Maybe there's some bills that are out your way that they if you get fresh flower from the bill I prefer to use our lower protein flour. Which is sometimes called. They have very tender built your rap pop star and I don't normally and heavily finely ground heavily because I love the flavor of it. That's what comes the is actually a different kind of week. Ours is you know one variety of week which is flowered spread flour students have believed it. And the families and a bite to it. And nick the goat like thicker and And also gives a beautiful gold color to it well I always like at that but it's not necessary there are maybe getting making. You can use whole Normally it will actually make the whole week with. The the regular. They pastry flour. So that's because it can be a little bit clumsily if you make good holy beach so we used but we score and he's rye flour. All of them each one makes a wonderful prospect and I think that's part of what defining issues. You know trying haven't there which locked in a different kind of variations and then trying to round maybe want it decently to help. Maybe you've come a problem playing and you know what can try and really what a lot of couple of a little bit of flour. So you know that the cost is low. And the results are so satisfying. I also have had a lot of fun he changed. Not the middle school age kids. Eleven of thirteen year old fourteen years old. Make and they get a kick out of it it's so much confidence special food make ravioli and make them a little plaque. Which is kind of a little capital letter form that you roll it out on again it's as simple. I try to avoid any equipment that's gonna have lots of party to lose or a lot of vintage can break. Actually capital and recommend there's a wonderful. An Italian kitchen wares storage Philadelphia cold front into the back in the book with great resource is where I. God I've seen all of the equipment that I used. So that everything that he's in the book is available in App Store which they do have an online. You know they they have not chop as well and that's stories it's been it's not I think they opened in nineteen note that. So that's pretty armed venerable and of course I would prefer if I can to. Support you know the local businesses so. Well I think it is the focus local today I just have to harp on the pictures again you must tell Steve that. You know obviously you made all this possibly he took pictures of but between the two you. You know how to make have a copy UV you could explain that in textual information and just wouldn't work. Now. Definitely the photos I think there and I you know having had so much experience. I can't even tell you how many thousands and thousands of workers an immediate restaurant you know what restaurant we had over 200 feet. We think all of our own pop that other one with a 175 seat to the same. And then the third means so each restaurant that I've worked I've always prepared male pop up. So I kind of know what what the issues are and where the problems can be and also I did them. What I was doing the testing packet all the whole kitchen home and I did not use any you know real professional about these hurricane machines. I you know mean the one thing that would the other thing that's extremely useful for somebody that wants to make pop Regularly and eat it any kind of if you gonna be doing in the day. I definitely prefer to use an electronic scale that. A group called Wichita wins is taking their campaign to this Thursday to convince state lawmakers to approve gambling at the park. There's a bill currently in a state senate committee that would allow that to happen John Walker who represents TJ's great as someone who will be making the trip. You know we send me emails are winners and pick up a phone call on. This puts a face with the names and with the letters and phone. If you're listening to the radio today I'm glad you are I hope your outsider in your car going somewhere it is one of those perfect. Spring days they'll need on number one duke two wheels blown up Tibetans whose idea about the year I'm. Great program today midwest once that's going splendidly so the about was a big success on Thursday night last night three winemaker dinners I was at the pleasure which our country club with. My good friend Chris Benz order in Canada through the wind was spectacular. Same reports from. Legends from woods and from the DoubleTree by Hilton out by the airport they had a great dinner and of course at the Mary on. just put together great show some great lines and of course tonight the grand tasting in the studio with me my good friend John grassy we're gonna talk to him in the second half about. Some of the lines he's going to be tonight that you may taste and don't forget most every one that we talk about here on the good object public exchange. Long time sponsor and the object of the one of the week. A killer one and Jones portfolio. From Raymond vineyards lot of things have happened agreement last couple years with the about that. First up though it's Clifford right. And off her chefs live. And he put together book that I just because frankly I like Jesus and couldn't be any better and cheesy the cookbook it will make she's milk. Clifford is prolific he's the author of thirteen cookbooks including a Mediterranean the originated cookbook of the year word. 2000 he writes articles for Glavine. As it and gourmet about a deep in you name it he's been there and he joins us now I think from Santa Monica Clifford at a minimum for in a welcomed the program. Good afternoon yes Simon Santa Monica right now but not so let me Monica. You know what though. There's a lot of people just simply instead. And that given day if. That's quite right. I'd like your comment about melting that's what this book is all about. God you know it was. You know if you looked at my website you know it looked anything about me I'm kind of happy eater and a 10. And I'm the round mound of sound and and part of that is that I really like cheese and I did this several years' worth of independent representation for our gourmet and their when their organs started with their website. And and self taught and learned so much about and then. To have a great cook book and by the way congratulations to a great job. That is dedicated to all the different ways you can use is GDP's. Is right up my. Now it's of the report talk about the book let's talk about you puzzled about your journey in food in your man thirteen cookbooks you looked at all man. No I'd like to think I'm looking but who knows that I. Had my first cookbook published 725 years ago a book about Sicily and I spent many years writing about learning about Italian food and Mediterranean food. That's for the past ten years I've kind of been branching out to. Anything that's strikes my interest really. And and so I had written a book on the best soups in the world book on vegetables about casserole. But the constant news and now but I hit cheese because there's so many books out there about. about making cheese and eating but very few books about cooking with chief. And that's the idea behind this book. Well and in it every time my thumb through in the book is just chalk so what is there I did you notice like there's got to be hundreds of recipes. There's 250. Plus recipes and boy let me say they were difficult to choose because when it comes to achieve. I mean what's bad recipe real. So I had to pare it down from about a thousand possible recipes. And that was not front but once I got it down you know if somebody asked me what your favorite outfit is these are the favorites. The 250 favorite. Unbelievable well you know every time I I opened the book likes it when I just sat down the books that flopped and open it came open to page 178. And there's addition their court and might pronouncing it wrong Moriarty. and this is a big Greek. Dish with melted cheese and tomatoes and Chile's served as an appetizer agrees and thank him. I make that there's just no way around that's that's on the list for this coming week. Yeah it's great too because it's so easy just turn the other non stick everything in of group rather give an update at. to the other there goes everything melts together and it's fantastic. The the paring down had to be difficult obviously you organizing the book as a is pretty standard. You you've got it in soups sauces and dips. Critters with favorite pastries the list goes on. In eggs and cheese cheese and moreover cheese with rise and there with cheese. My fair reflection beaten through with cheese and and I can't believe Clifford you have been on the program reported that a book and and some of the other you don't wanna look at the list. Actually I have been on the program before I just took a look. Look at I think you interviewed me about five years ago. my memory. That's Zuma to Bud's chief look at the list of books there's I was interested on so that makes good sense that. sorry I remember that there wasn't that wasn't memorable interview capture him. Oh now there's too much to remember life. All right so. Let let's talk about basics though. Because if you're gonna cook with need to have a little bit achieves knowledge so that your argument just tells you were to go what the pick for certain cheeses what are your favorite Great can't achieve that you're gonna find pretty readily in the in your supermarket. Swiss cheese or as it's noted Switzerland and grew year achieved. These different tactic To use that there's Mexican cheeses which are. Very simple but great melting cheese many of them some of them are used for crumbling. So the idea is really. If that changes very expensive. And very special. I don't recommend cooking with it recommend. Eating at room temperature to get an idea of its subtleties. But with the thousands of other cheeses you could just melt them away and remember doesn't really need to be cooked. All it needed to be melted so you don't burn the heck out of that just. Gently no But there's something you should know about keeping she's. Story in the refrigerator. Having that room temperature and what happens with the cheese would So for instance an aged The textual be grainy like parmesan for instance. But young chooses will be here. And that's why we kind of tend towards the younger and younger means under six months. So Swiss cheese year she's moderate Jack. Cheddar cheese cheddar they all work really well Like dad and I mean I know your right pitches once they melt they doing the best were they can do. But most everybody whether it's on the topping on top of a beautiful handmade macaroni and cheese casserole or. The stuff that leaks out the side of your tests time and patiently prepared grilled cheese sandwich like the crispy bits. Yeah absolutely. Actually on the edge if you ever had lasagna and get a little crusty cheese yeah there's been. People go at all that's terrific part two. So if it's okay to get a little bit of karma as they on some of the cheese right. Oh absolutely and there's some gene which are actually called frying chooses that they're fantastic you just. Cook And in pants and they don't they just become crusty on the outside. And that's how you them to his ability terrific. I love that it is some of the that you can grill. Well they're fantastic and it's it's sort of a miracle to be confused I think there's no way this is gonna work and you throw the on the grill there is grilling away not helping to degrade and they're fantastic. I know one of my favorites from my gore made in the beginning was cypriots believe me. You know it and with what you pins here that are on the growth. stays together and a chunk it gets screaming in the middle and caramelized on the outside and it's at some magical. It's fantastic there's begun seeing now is didn't. Supermarkets just your regular supermarkets that are called frying And those were ground that there they don't give you the real name and it is cold so and so frying cheese. You know work trying to buy into the didn't panic to get the whole idea. Like that. Okay so you pared down to this nearly 300 recipes. And let's just we will have to run your ingredients and recipes but let's just. Pick a couple here and talk about things that I know most everybody. Imam where another. As had a that he favorite U we've talked about to a Mac and cheese and banquet on macaroni and to me is so much other than a box. From Kraft. It's almost hard to believe that. One way to eat macaroni cheese out of a box and you could make something so spectacular. You know all by yourself in my goodness it's not hard. And the cool thing about it is that it's it's really and Americans Although not surprisingly it's origins are in Italy and in fact one of the first written recipes from macaroni cheese comes from a thirteenth century Italian agreement script. It has but the American wind. Very probably what we don't know for sure they have been. Really kind of created by. Thomas Jefferson's daughter Mary Randolph. Who is credited with inventing the And she used macaroni and parmesan but the world macaroni cheese that we talk about. Is elbow macaroni wit that cheddar cheese and then mixed with a little bit of quite so let's hold together flavored with Dijon mustard. Bread crumbs over top to get that nice to have finished. And some people use a combination of white in Orange chatter. Got to that particular color which he likes so well. Okay. And then. And that you know. I think you've got to talk about the grilled cheese sandwich. We do but before we leave macaroni and cheese what about this plethora of low fat cheeses. I know that while you might be able to eat a ago yes kind of like cheese I think in there with it's not the answer. My my answer to that is. If you want to worry about facts just don't eat it forget about. All that does is kind of bastard that I achieved. Go with the whole. Good flavor apple flavored cheese but eat less of it because after all is very flavorful you don't need either half a pound of cheese to be happy. An will do so just be sensible and need chief to stay away from the low fat which although it doesn't make you unhappy. And it doesn't really feel that she's it doesn't. I'm she's my good do you Orleans. I. Season California cheese pure she wrote her most recent book is all about girl she's different. Yeah great and my goodness there's so many different recipes in her what are some of your favorite that you're incorporated in this book that we're talking about today hot cheesy. Well you know I started with one simple idea is that the typical American grilled failure at every kid grew up. Is made with white bread and American cheese slice. And I thought this is crazy we have the finest is being made in this country today why use this cellophane wrapped sliced bread that's tasteless. They want you to American cheese slices which aren't even Cheney's. G technically they're not their cheese product. They achieve byproduct exactly. So I began fooling around with different to see how grilled cheese sandwich. Really be spectacular so the first place to start is remember this is called a grilled cheese sandwich it's not all the diets and which. So nobody on the chase. Give it real cheese flavor and then use the best well can. Find in flight to yourself this if she wants. And then start fooling around the is so we kind of basic recipe that I uses some Fontaine mixed with. Recollect organs so. But now that's just what variation you can really start for paralysis and mixing for instance grew year in ten connector. You don't in Munster. little chatter moderate jacket monster. And then if you start fooling around with. Other ingredients like hand as far as I'm concerned that's not a he it anymore that. That image you the TV. Exactly exactly so. And that's just seven you know idea that I have in the book there's a thousand others but the idea is fool around. I don't remember your distaste with one cheese you can combined achieved. All right cliff mistake a short break pay some bills would come back we'll talk more about. Your new book it's hot and cheesy. You can learn more about Clifford and get it directly to order copies of what it Clifford any right dot com. It is one of the beverage professionals here in town that this helps this get great lines the one tests will be done about that. But let's get back and talk about hot and cheesy with Clifford right he says the author this great book. And by the way there's a week left got a conflict you're right to Amazon to get one or you can go to this website Clifford a right dot com learn about the book. And order copy from there. Because before we leave talk about group cheese sandwiches we know that the you put it is important and you have high quality bread is another deal. What do you put on the outside of the bread as a brownies and butter for and the like mayonnaise what do you do. I think you've got to stick with butter and room temperature broader. Read on both sides of the bread or does not at first in the in the and the goes down and doesn't tapped. That's what's gonna give you that delicious crispy crust which makes grilled cheese sandwich standout. Among used to butter one side. Put that down. But the topside while Leo bottom side is on top of the slipped it over and then put that she's on the Chris it's up now while the other and Chris. it was double Chris double double gripped. I would find are right we we talked about probably the two main things that come among people think of Macaroni and cheese of course and a girl she's got some of the usually it's a pretty good selection of international recipes in the book. I do and one of the really fun things is. A lot of dishes that one can make with chief that are really very simple I give one example. Please stand pistachio of you got some broccoli and we usually eat the fluorescent cut the stands soft and you could take of course but what I'd do it let's take all of this standard usually from thick 36. Buckley. And quarter them likewise if repealing them then mix in with a little ground pistachios. in Japan on top gets sprinkle parmesan cheese and you stick it into the 400 degree oven for about. And twenty minutes and you got yourself a magnificent looking at very simple make. But career so. Ribs sticking step iconic golfer the beginning Now this is something that's just over the top and you take basically baking potatoes bottom quarter inch thick there little chopped onion. And a quarter pound of slab bacon added to six places you layer that with a quarter kind of grew year. And then on top of that you poor. A cup of half and half. And some creme fresh or sour cream. And they go away and you have had place. It you know perfect side condition no doubt but on the same man. kind of a perfect vegetarian main course. Yeah I guess you can think they could think of bacon and vegetarian I guess you could pull it off the If you're gonna need one enemy as a vegetarian you gotta have and but victory. Soups you know some of the most memorable suits I've ever head. Had cheese in them you know the result. A in corn chowder. You don't have the chicken it chicken soup with little bits of cheese sprinkled on top and then of course French onion you have some great super before your. I do it you have some of those. you were talking about the French onion mean that is just an amazing. Soup and beat it's you know we don't take credit became a little old fashioned. And there's no reason that it should have because it's a fantastic. Fantastic soup but I didn't want examples from the now like to do and that's a Turkey soup with cheese pancakes strips. This is something that you make after Thanksgiving when he got that Turkey carcass that you use the park is to make this do. And going to make these pancakes that and basically you always do which adds to it some good year in front in achieved and So when you the pancakes are cheesy and cool. The district and then what you do if you have put them. Into the let them away and it's fantastic. So that's one way of doing it. Another dish that I like quite a bit is. Just. French attitude that you talk about which is absolutely fantastic. You know. Before we Hugo we gotta talk about another small section in the back of the book. It's it's it's all in the name about cheesecake. Our problem. Well that's that's that's to die for and the cheesecake god god there is at stake in this New York style cheesecake. And I have to be honest it's it's an adopted recipe. From a another. Fellow who did a lot of research and Greg Patton and he wrote a book called state in America. And you know there's a thousand. New York style out there and I've tried that many of them. And finally came this is the one that I wanted to adapt for this book and it really is and I have to leave deal. This simpler cheesecake cheesecake torque which is you don't wanna get so involved because it the proper cheesecake. Is in involved affair let's let's face. Yeah but then when you. you might cheesecake benchmark was flown down to Florida from Chicago. By a wealthy restaurant tour that we were having dinner with. And it was about six inches thick. Ten inches around and wait about six pounds. Oh my goodness does that sound happen. You know and then he says well we're gonna have bumper you know with this. But while I'm opening yet I'm microwave your slice of cheese just a little bit too warm. There are so good that he's done. my right. Yeah it was amazing thing and it just all that was was no crossed. No no it didn't have like Graham cracker crust on the bomber it was jobs cheese. In it. Keep it just happened I mean at any time I think of anything that she's very just kind of data mean look at only see even I would there's a recipe in the book just. Any crate filled with user must upload a cream with and in just go on and on. You did you got a bunch of great rest of reason here in thanks for have been available short notice I got that to get Johnson they couldn't. cheesy is the answer the question is I like cheese. On Saturday the 26 of June. Often barbecue it's a little at a district right in the circle you can't miss it and when you go their walk in. Just a look at the spice rack in the sauces you be glad you did. In the is John grassy. The beverage Specter did and you go what is that John a little about what you do in the three tiered system and why such a big part of me which this year. Well I've never missed a a midwest wind I've attended every one it's existed. What I do is I know of a broker they call us and I represent many many small family on wineries. And so the small wineries can't afford to field a national sales force for these people like myself and regionals. And sell wind specific territories like I have states. That every brand I represent is off by states but. It's actually less money to represent through a broker like myself because you pay on expenses we don't travel expenses there's no health care. And so I tell people that they sometimes think that always one more of expense for the winery was truly isn't a key to somebody's got to go out there and sell That Chris Spencer was in town right had put his air transport in totality did you stay with me in testing and you're right here in place all the top ranked. That's it it's a good layer of the three tiered system that they want it makes it easier on somebody like standard beverage. They don't have the manpower in blood and so every single product that in the book. And of course doubling since the wonders and stuff your portfolio is magnificent we're gonna talk about. All the ones there are mentioned at least all the want your report tonight in. And you know you know Jamie Stratton calls you the hardest working guy and the one business. right I mean I think I met I met you before when you were ready your one inch earth before improper on offense and that you there that you have been a part. Installments under everyone that since the beginning seventy years I'm doing this for 31 years a long time yeah. With a great deal. It's a good thing in. You're like say your portfolio is cool tonight at the midwest once that's for those you don't know it it's close 350 different labels to choose from John how many just look at here where you got thirty or forty to 2530 that you're gonna have there tonight. It's about 35 finds there tonight on four different style locations for different tables. And I try rate goes up by a supplier for example I've got a new Australian suppliers coming to the state has been here about one month. Robert goalies he winery. And they need to different brands said within that portfolio. And Robert all these gentlemen Sarah rose years and years ago from zero cases to six million insult that is that in 2001 to. Felt corporate lot of money but he kept the vineyards. So in 2006 he started this new project Robert only and so that's what we are today it's finally getting to the midwest. I don't I have Robert early on the program. Win them the biggest award winning GSM. Ever from Australia and that countless must've been fifty years ago when he was on the program still. he was running the show Rosemont and what a great guy and it now for their family members kind of still helping him in every aspect of what he's doing and then you and I talked a buddy of mine in California. Was this stuff and asked them two years ago. Great stuff because it's coming from some of these that are mature but have been under his religion care for for years. Right that's correct and he does by some from Western Australia as well amber ten and Margaret river. And at some point he must have his own winery in both sides of the Australia won on the east side of one on the west organizing my G which is kind of in the south east corner of the country okay let's talk about the labels from Robert early vineyards in Austria that you're going to be points adults eligible OK for the Robert on the label which is his flagship they're more expensive they sixteen to twenty dollar range. How they'll be as Chardonnay I plan which is about 40%. Number low 52% cabernet. And also a this thing and three from that here just more than that that exists in that particular label we don't have follows winds here in Kansas yet. The tic label which is gonna be no less expenses of the two tiers is about a fourteen dollar retail price. And we have four lines and that grouping with Chardonnay so share Shiraz. And cabernet it's so there's an interesting story about ticked off. Health of various. Robert goalies still alive and so genes only tick tock is a name that the lower priced here. And James only is actually Robert all these great great grandfather he went to Australia NET fifteen. But he went there as a prisoner he got caught stealing she's in England and gets sent over there. With his his jumpsuit on I guess revenue had for prisoners but. If your property of these he stayed back can you had has brought airliner clothing. It would also be an ability on the voter building so in this case being a prisoner he had his brought her on is his clothes so he's in jail for about six years. And setting the Sydney Tom Clark doesn't work anymore so who's gonna fix it well this guy's a clock maker for the pardon him becomes out of jail. He fixes that Tom he's a suburb named after him call overly. And he makes a lot of fine watches and really expensive clocks for the college teams only It's got to brought her on the top right. That is a beautiful label some pretty great ones that are really good prize. Rights already gotten some good press the lowest score so far as an eighty points once and for that kind of of value 88 points is rock star game a main absolutely agree thing. OK so that's trouble early and and I can't wait the only talk wanna have was the cavernous so I gonna stop by. And try it blew the this seminal books only on Glen in the And the shortening and Robert at least I had all that but probably not that the danger pouring this year probably not. Because it was just in the states two years ago and I had a so this is hopefully another vintage. What else reports and other products segment of the. Well I'm also gonna the table I'll be working because San Francisco one exchange. Again see of an entity that represents small on wineries and they use people like myself throughout the country to market these brands to the wineries make the wind. The one exchange actually does all the paperwork the billing himself on so from that group I'm gonna have David Bruce and you know and that's always great piano wise to do and it's just 1964. I'm quite he's gonna have three different winds near the quite a red and white electorate both Moscow based misuse of the heart rate right now in Kansas I'd also one of his more expensive. wants to dessert line. Quade is always been something that. As well whether it's his star murder is unique labeling him and the blends in the Pentagon is already one of my favorites and that's really your report right now are just. Really if you like winds with and those witnesses are not for one sweet. But these for a lot of fun to the table whether it's after dinner beverage or even parity I think there's a lot a lot of like you can do with the ones. Do and it's quite Electro Rent and what I showed this on a table to vocal I don't like I wanna read want to receive this week just try it. And once they try cured their hooked yeah because sexy of land of the mascot and the black muscular great. it's really usual one and aromatic all three of those you stick your nose in the last week at the minute we're not Milbrett. Know grants dad around as a brand since 2005 so it's a relatively new label. He's had at Kansas now for about two and a half years it's tremendous press this spring has gotten many many ninety point scores 89 across the board and their vineyards. They have they started growing back in the late 1990s. And sold their food to about forty small boutique wineries or Washington State and these people are getting great press off their juice and say hey let's start our own brand which they actually did. And so that we have their own brand they'll grant from butch and Jerry no branch from Washington. And got about 16100 acres of fruit such a big operation by a crushed. And saw has some of their wiser tonight report actually poured their every sign that the walkabout as well and off dry style. Well you know. Everybody astronaut OK what should I go worse place that I can hang my hat on if it comes from Washington State and it's in this state it's a good. If it comes from some of the big producers and maybe even not. Not the big producer of Milbrett he these ones are rarely well made and just getting a war copying and provide great value you know saint one states and and all the big produces Columbia crest under that same. Umbrella. Just doing the most magnificent stuff that you can buy and so for seven and enough. Price one to access it Michelle's that they customer know there. And We're gonna take a break coming up we'll about we'll talk about the one of the week great one from and we'll also taste and it's wonderful one from BV. I got merits could let John rest in the studio will get excited we're ready for the midwest want this tonight at donated tickets. Did that which stock picks that comment over the this year the ticket window by him. Have in hand so you can get rapid entry I'll be there and I don't have a microphone for a change. Zinfandel to me when specially blended with with others just brings so much. equality to the plate and big dark fruit and and richness of sweetness and air Maddux it is not really there in the fruit although and I'm guessing this one has a little bit residual sugar. And when we say that at that means a sweet one that means it's more mouth feel issue. What's alcohol content. Now to look at I don't know it's 145. Yes definitely -- that the -- That's -- the planet sleeping that's been great the most important elected to the -- is the most important day.

It is you know you PP camp Telecom provider of -- don't work we know that Bakley but if you bought this book just for the first chapter just for the first there. Several pages you'd come out ahead because. You really have a lot of great tips and techniques for. Absolutely just about -- event though even if you didn't want killed. Absolutely go greener than you've ever been in your life and that's not your priority in money is your priority. Absolutely that the energy saving alone. You think some of the techniques in the book the -- that can help you do that.

Well let's first talk a little about you what got you to the point where you decided this was the book you wonder right.

I have got so many today but I think it really get started somewhere how I grew up I did grow up and midwest actually but Ohio. Yeah I grew up and integrated stair and might dad. Helped. Instill in me all the valued at me sir and I plan to being -- him went hiking with him and your whole family dead and and my mom and I would go shopping and for all of account for the best places and bad faith and meaning not the most expensive at the -- and but. We would go and only pipe so you can come at certain farm and we would only get -- I'm manager who knew my mom and would put that fascists. -- the site that was conceived and so I knew what real food was and Wendy Gillette but it didn't really all come together right away it played it really was when we started to hear a lot more about the environments and I wrote my little my -- cut booklet beyond that some -- be cookbook and it with a really at that point when I was real -- thing that. We get back and there's a lot more acute eating actually. Then jets couldn't and this would be better fire -- of it's actually better for the planet -- night and started to investigate all the different reasons why it was better for the environment as well and it would really startling let. I started to find out that about a third of all the greenhouse gas emissions -- we're really to -- put them alone. -- and it's something we just didn't hear about we heard about car and then the energy liason. Coal plants and things like that said. But food -- and haven't really been on the radars says that's and I thought I I need to do something and mother and just. Do it -- like -- I thought well I know how to read cookbooks I didn't I'm going to spread the word about it.

The good thing to do yeah yeah you did touch on a point that. It's kind of gave grew -- on one hand I've I've parked in spoke highly of the fact that you can go into and over big super -- restores and almost any time a year find things that are not in season where you live -- you can integrate produced from Chile and whatever. But then when you start thinking how it got here. And and the cost in the environmental impact of wallet transportation and really does. If you're concerned it makes you start thinking that for this idea of your local farmers market is the way -- ago.

Oh absolutely -- it's really up to you how green excuse could be felt like I can't get sustainable sweet spot you have to just. Find it right -- if it the only fruit or vegetable you want to eat it happened to be something that was transported from. I'm fairly. I'd rather have someone eat it created that development not needed at all so it's it's still kind of finding that balance that absolutely that local farmer Mac it is the first place that I would -- going on a regular basis.

Yet and fortunately -- opens up. Soon and hope it -- and it we we we have such a great farmers market here in. The -- a farmer's market and the and over market and when they open. Then every every show on Saturday we start with a marker of market update of what's going -- the market that they think. But I'm doing my part to bakery.

wonderful -- that's that's really one -- because there's you can make a thousand step that he wanted gave indicted up Krejci who did that but. Even just one day without going to that Larry -- every week. Or just coming that I didn't in my book which I challenged myself -- and I thought it might -- typical pat. And it -- and that -- I incorporated. A fruit or vegetable in every single out of my recipe is. Now and I have over 200 recipes so I know what can be done so that might be one little goal for yourself to attempt. Every -- at least try to at least incorporated fruit or vegetables everything -- they -- me.

With a degree in cookbook hundreds of planet pleasing recipes and tips for luscious look and style. Low carbon -- Jackie Nugent is nice have to be this nations in New York. And you if you want to learn more about the book that the website it's big green cookbook dot com Jacki let's talk about some of these tips like it if you just bought the book. The -- and look at the recipes. Some of your tips for. Reducing your carbon footprint now we're talking about you can save money -- calories you can to a lot of things felt familiar favorite tips.

I wish to order a well I think probably my favorite and it seemed to be a lot of other people favorites is. I'm -- idea with only clicking have you heard that term before.

have that little tell us about it.

Lid putting out well I think I coined the phrase we'll see if anyone -- cut the stepped up to the plate and say they claim the brave that -- what that is. It basically taking advantage of every -- heatley and I can't by using the lid could trap that -- and so the easiest way to describe that it. When he made about the -- let's say it spaghetti. You bring your normally bring your your pot of water up -- boiled. And then you put your pocket and and then you let it cook for ten minutes let's say it sometimes is but the -- says. So with live cooking what you would do is bring that water to boil kind of stir that pot that into the pot bring it back up to boiled. We might take 1015 seconds. Put the lid on it and then turn off the -- completely. So I didn't and then you get led at least cut that you're not using any energy at all -- that same exact ten minutes and you still have perfect pop staff. That you don't need you'd better keep that entire time as long as you put that lid on -- that he.

Yet another good tip what about -- Buying our food and an end in shopping things that we can do that might. -- towards a little greener approach to the kitchen work.

Yeah well when you bite into what I suggest is -- think going more plant based. So -- that might be changing up your your habits when you're grocery shopping so it. It might be shopping more often which it you can actually have fun doing that I know I -- and the -- every day and it takes and it might only take 1015 minutes rather than an hour. But but also on -- spend much -- you're tying in the coded area and buying something new that you haven't. I'm purchased before an experiment with it. If you if we follow much more of a plant based. I'm eating style that's going to make -- huge difference in so many different ways one is. Ford be our carbon footprints just because it is it that much -- says that so much better port where the planet but of course it's so much better for. And and then a lot of grocery -- is now I've signed. Buying a lot more of the their produce locally though if you have. If you have an extra few minutes to spare check out some of -- the label that even on your grocery store displays a lot of time and now. Listing aware that the product is coming from and the more locally weakened and purchase that he would not to produce anything about opera going to.

true true enough. I'm. Let's let's talk about how the book is laid out when it comes to recipes even though we are still a lot of things and from the book we're gonna talk about but. You need to take check it out -- course to buy your own copy but the recipes which he you do what you really did was you may healthy stuff easy and it bit but the goal is. Sure cooking Contra preparation time so that we're not using. Those kitchen appliances to the max. Who you know -- in ways that we might have done in the past. But it really is kind of healthy stuff to -- up by season's felt about the Malaysia.

Yeah I I laid out -- by -- and just couldn't do it take advantage of would ever. Most people have available to them. Locally in the United States could it was a little bit challenging making a local black even though -- the national black but I think I I came pretty close till it. I'm so you basically right now what do we have spring. If you go to this spring section of the bucket going to find just about everything that's in that spring all the ingredients and that brings faction. Should be available locally -- And if not you might when it gets a recipe or you put it back to make it a little easier rather than trying to figure out okay where is that chart of of which they didn't even know what am I allowed to buy right now what am -- not -- and just do the best thing to do if you have the book is is at stake here that these milk on faction. On the other thing is likely we're talking about earlier going to the army blanket if it's that the army blanket if you can call it a local if it's going to be available so that. That's definitely one thing that I look at just to make it easier for every -- and you can go green without even realizing you're going greener it's just as -- simplest that. I'm but I also made sure that every recipe with twenty minutes of cooking time or less. Though because I thought -- people. In -- you have. And encourage people to go a little -- and you eat a little healthier or -- plant based I didn't want to make it more difficult because anything that's more difficult. Can't that there were not going to want to follow it and it easily it down or the readily found I call it twenty and BMI twenty minutes -- meal. In this is kind of the goal that I stay quit and and that the price to if you even it cure but I appear on cooking something involved. So let's say you've had a capital that you wanted to make and it. And it took an hour debate could have a that's a lot of energy that you use thing but if that debt capital that they made six -- And that's ten minutes from me also that our divided by thinks he has ten minutes per meal so that's going to be -- here.
