Absolutely that the energy saving alone. You think some of the techniques in the book the -- that can help you do that.
Well let's first talk a little about you what got you to the point where you decided this was the book you wonder right.
I have got so many today but I think it really get started somewhere how I grew up I did grow up and midwest actually but Ohio. Yeah I grew up and integrated stair and might dad. Helped. Instill in me all the valued at me sir and I plan to being -- him went hiking with him and your whole family dead and and my mom and I would go shopping and for all of account for the best places and bad faith and meaning not the most expensive at the -- and but. We would go and only pipe so you can come at certain farm and we would only get -- I'm manager who knew my mom and would put that fascists. -- the site that was conceived and so I knew what real food was and Wendy Gillette but it didn't really all come together right away it played it really was when we started to hear a lot more about the environments and I wrote my little my -- cut booklet beyond that some -- be cookbook and it with a really at that point when I was real -- thing that. We get back and there's a lot more acute eating actually. Then jets couldn't and this would be better fire -- of it's actually better for the planet -- night and started to investigate all the different reasons why it was better for the environment as well and it would really startling let. I started to find out that about a third of all the greenhouse gas emissions -- we're really to -- put them alone. -- and it's something we just didn't hear about we heard about car and then the energy liason. Coal plants and things like that said. But food -- and haven't really been on the radars says that's and I thought I I need to do something and mother and just. Do it -- like -- I thought well I know how to read cookbooks I didn't I'm going to spread the word about it.
The good thing to do yeah yeah you did touch on a point that. It's kind of gave grew -- on one hand I've I've parked in spoke highly of the fact that you can go into and over big super -- restores and almost any time a year find things that are not in season where you live -- you can integrate produced from Chile and whatever. But then when you start thinking how it got here. And and the cost in the environmental impact of wallet transportation and really does. If you're concerned it makes you start thinking that for this idea of your local farmers market is the way -- ago.
Oh absolutely -- it's really up to you how green excuse could be felt like I can't get sustainable sweet spot you have to just. Find it right -- if it the only fruit or vegetable you want to eat it happened to be something that was transported from. I'm fairly. I'd rather have someone eat it created that development not needed at all so it's it's still kind of finding that balance that absolutely that local farmer Mac it is the first place that I would -- going on a regular basis.
Yet and fortunately -- opens up. Soon and hope it -- and it we we we have such a great farmers market here in. The -- a farmer's market and the and over market and when they open. Then every every show on Saturday we start with a marker of market update of what's going -- the market that they think. But I'm doing my part to bakery.
wonderful -- that's that's really one -- because there's you can make a thousand step that he wanted gave indicted up Krejci who did that but. Even just one day without going to that Larry -- every week. Or just coming that I didn't in my book which I challenged myself -- and I thought it might -- typical pat. And it -- and that -- I incorporated. A fruit or vegetable in every single out of my recipe is. Now and I have over 200 recipes so I know what can be done so that might be one little goal for yourself to attempt. Every -- at least try to at least incorporated fruit or vegetables everything -- they -- me.

And you if you want to learn more about the book that the website it's big green cookbook dot com Jacki let's talk about some of these tips like it if you just bought the book. The -- and look at the recipes. Some of your tips for. Reducing your carbon footprint now we're talking about you can save money -- calories you can to a lot of things felt familiar favorite tips.
I wish to order a well I think probably my favorite and it seemed to be a lot of other people favorites is. I'm -- idea with only clicking have you heard that term before.
have that little tell us about it.
Lid putting out well I think I coined the phrase we'll see if anyone -- cut the stepped up to the plate and say they claim the brave that -- what that is. It basically taking advantage of every -- heatley and I can't by using the lid could trap that -- and so the easiest way to describe that it. When he made about the -- let's say it spaghetti. You bring your normally bring your your pot of water up -- boiled. And then you put your pocket and and then you let it cook for ten minutes let's say it sometimes is but the -- says. So with live cooking what you would do is bring that water to boil kind of stir that pot that into the pot bring it back up to boiled. We might take 1015 seconds. Put the lid on it and then turn off the -- completely. So I didn't and then you get led at least cut that you're not using any energy at all -- that same exact ten minutes and you still have perfect pop staff. That you don't need you'd better keep that entire time as long as you put that lid on -- that he.
Yet another good tip what about -- Buying our food and an end in shopping things that we can do that might. -- towards a little greener approach to the kitchen work.
Yeah well when you bite into what I suggest is -- think going more plant based. So -- that might be changing up your your habits when you're grocery shopping so it. It might be shopping more often which it you can actually have fun doing that I know I -- and the -- every day and it takes and it might only take 1015 minutes rather than an hour. But but also on -- spend much -- you're tying in the coded area and buying something new that you haven't. I'm purchased before an experiment with it. If you if we follow much more of a plant based. I'm eating style that's going to make -- huge difference in so many different ways one is. Ford be our carbon footprints just because it is it that much -- says that so much better port where the planet but of course it's so much better for. And and then a lot of grocery -- is now I've signed. Buying a lot more of the their produce locally though if you have. If you have an extra few minutes to spare check out some of -- the label that even on your grocery store displays a lot of time and now. Listing aware that the product is coming from and the more locally weakened and purchase that he would not to produce anything about opera going to.
true true enough. I'm. Let's let's talk about how the book is laid out when it comes to recipes even though we are still a lot of things and from the book we're gonna talk about but. You need to take check it out -- course to buy your own copy but the recipes which he you do what you really did was you may healthy stuff easy and it bit but the goal is. Sure cooking Contra preparation time so that we're not using. Those kitchen appliances to the max. Who you know -- in ways that we might have done in the past. But it really is kind of healthy stuff to -- up by season's felt about the Malaysia.
Yeah I I laid out -- by -- and just couldn't do it take advantage of would ever. Most people have available to them. Locally in the United States could it was a little bit challenging making a local black even though -- the national black but I think I I came pretty close till it. I'm so you basically right now what do we have spring. If you go to this spring section of the bucket going to find just about everything that's in that spring all the ingredients and that brings faction. Should be available locally -- And if not you might when it gets a recipe or you put it back to make it a little easier rather than trying to figure out okay where is that chart of of which they didn't even know what am I allowed to buy right now what am -- not -- and just do the best thing to do if you have the book is is at stake here that these milk on faction. On the other thing is likely we're talking about earlier going to the army blanket if it's that the army blanket if you can call it a local if it's going to be available so that. That's definitely one thing that I look at just to make it easier for every -- and you can go green without even realizing you're going greener it's just as -- simplest that. I'm but I also made sure that every recipe with twenty minutes of cooking time or less. Though because I thought -- people. In -- you have. And encourage people to go a little -- and you eat a little healthier or -- plant based I didn't want to make it more difficult because anything that's more difficult. Can't that there were not going to want to follow it and it easily it down or the readily found I call it twenty and BMI twenty minutes -- meal. In this is kind of the goal that I stay quit and and that the price to if you even it cure but I appear on cooking something involved. So let's say you've had a capital that you wanted to make and it. And it took an hour debate could have a that's a lot of energy that you use thing but if that debt capital that they made six -- And that's ten minutes from me also that our divided by thinks he has ten minutes per meal so that's going to be -- here.
